
Dearest Rachel –
You know full well that I’ve never been a fan of leftovers. Although it’s not the food per se – give me a half-full pizza box from Lou Malnati’s, and I’ll be happy for days – it’s more a question of the obligation to eat it within a certain amount of time; time in which I may not really have the desire to eat that particular dish again.

But some days, there isn’t that much choice. There’s plenty sitting in the refrigerator, and if I don’t do anything with it, it’ll go bad. Besides, I have to wait for Chompers to fall back asleep before I can go shower – I might as well do something more elaborate than just cereal and milk.

Besides, you always told me that, during your Japanese honesty, breakfast was a little more than leftovers from a previous meal. So I guess this is going to be Japanese-Mexican style?
Anyway, given the fact that the other day I had far more filling than empanadas, I figure I might as well work on that. If nothing else, I have those taco shell pans that I mentioned last time.

I probably should mention that I had no plans for this meal, and idea where the taco pans were, but as I was putting away a box of Ziploc bags under the oven, I found them, and figured, “well, why not?”






And that’s pretty much breakfast. It’s a little more involved than what I usually have, but it accomplishes its purpose of clearing out most of the chorizo and veg combination.

And I suppose we can celebrate any amount of progress, after all. Now, if I can only figure out whether Daniel wants anything for breakfast…

Hmmm. That sounds like a fun challenge – making a meal out of “Starry Night”. And give just about anyone a half-eaten box of Lou Maltani’s, and they could eat, satisfied and happy, for days.
